good thing i've been working on my thread-necroing craft

hello! i've been getting into making ice cream lately. rarely have i taken photos. but so far so good. trying to master a couple of different vanilla bases, but have already waded into cookies 'n creme (one of my personal faves), and peach for a friend whose birthday is on saturday - it's his fave

Good to see December 2012 me was on the baby food & fajitas.

Made a cracking steak tonight with sweet potato fries, garlic butter, grilled tomatoes and onions cooked down for about an hour.

(Serve with 3x Furstenburg lagers)

Raclette is fantastic, but I've never thought to use it on a burger. You might be onto something there!

Dude, you'd be most welcome! Currently trying to limit myself to once a week, but it's so damn good man.

Sorry, just saw your request for tips. I'm still learning, but I've learned to go higher fat content than normal. I'm usually a lean mince beef guy, but for burgers you want 20% fat if possible. Weight wise, I go around 80g per burger. Proper heavy burger press, and really smash it. Don't be shy, squash the crap out of it. Flatten it so you can almost see right through the meat. Sear one side quickly, flip, season (good quality salt, black pepper, smoked paprika, garlic and onion granules, a little MSG if you like) flip again, get some proper American burger cheese (I found a recipe to turn ANY cheese into burger cheese which I'm dying to try), cheese up, cloche on to melt. Ideally you've slow caramelised some onions first, or made a chilli and bacon jam. There's a blue cheese and salad cream sauce I saw recently I really want to try. Get your bun of choice toasting in the pan with some butter, quick, quick, quick. Lettuce, tomato, sliced gherkins. Assemble, plate up, orgasm whilst eating.

Yes - it's going to be a "lively" one. I think I'm away that weekend so won't be able to try and get tickets unfortunately - would love to be there to see Joelinton send Isak flying out over Grey's Monument.
